I’m not too crazy about corn syrup, or recipes with corn syrup because it’s just so darn sweet. So, I don’t like to buy corn syrup because I hardly ever use it. I’ve done a little research and now if I have a recipe that calls for corn syrup, I just make enough for the recipe.
This is how you make your own corn syrup.
You’ll need a small pan and a candy thermometer and two ingredients, water and sugar.
2 cups of sugar
3/4 cups of water
Combine the water and sugar over medium heat until it comes to a boil.
Stir while it’s boiling. Continue stirring and start watching the thermometer. You want it to reach 220 degrees. When it reaches 220 degrees, take if off of the stove.
When it’s cool it’s ready to use.
Pour the remaining into a jar for a few months.
Some optional ingredients:
pinch of salt
1/4 teaspoon cream of tartar
1/4 to 1 teaspoon of vanilla
Add any of these to the water and sugar and continue with recipe instructions.
