It’s unbelievable how someone that was just 2 years old, has now turned 19. We’re celebrating my nephew’s birthday and instead of a birthday cake he is requesting a Pecan Pie. Eassssssy.  Delicious and Easy Pecan Pie.


Here’s MY recipe.

9″ or 10″ pie crust


Bake the pie crust  at 375 degrees for 5 minutes. Let it cool.

Reduce the heat on the oven to 350 degrees.

3 eggs, slightly beaten
1/2 cup of corn syrup
2/3 cup of sugar
1/3 cup of brown sugar
1/3 cup of butter, melted
1 teaspoon vanilla
1 cup to 1-1/2 cups pecans
1/4 teaspoon salt

Mix all ingredients together in a bowl.  Pour into cooled pie crust.


Bake 40-50 minutes at 350 degrees.

Cool slightly before cutting.

Just as a side note, I make my own brown sugar.  Mix 2 tablespoons of molasses into 1 cup of sugar. Or check my other page for the homemade recipe with pictures. What a rich flavor. I think this is great, because you never have to worry about that hard bag of brown sugar in the cupboard. But, if you prefer to buy it, keep in mind it’s best to double-bag it so it won’t get hard. Or, you can slowly microwave it to soften it up.



Also, this recipe calls for corn syrup.  Oops, I didn’t have any corn syrup, so I made my own. See my other post for home made corn syrup with pictures.



You can buy a pie crust, or make one…see my other posting for homemade pie crust with pictures.  You know there’s nothing like a scratch pie shell, but it’s your choice, because it’s YOUR pie! I don’t think anyone will complain.
