I can’t believe I haven’t shared this recipe with you yet. This is a soft lemony cookie, and a perfect treat with a cup of tea. They are quick and easy to make. I haven’t included too many pictures because this is a straightforward, simple recipe to follow.
1 cup butter or margarine, softened
1 cup sugar
3 cups flour
1 teaspoon baking soda
1 cup frozen lemonade concentrate, thawed and divided
Additional sugar to sprinkle
Preheat the oven to 400 degrees.
Cream together butter (or margarine) and sugar.
Add eggs to butter/sugar mixture.
In a separate bowl combine the flour and baking soda.
Add the flour mixture and 1/3 cup of the lemonade alternately to the creamed sugar mixture, mixing well after each addition.
Roll into small balls onto an ungreased cookie sheet.
Bake for 8 minutes.
After baking, brush the tops of the warm cookies with additional lemonade concentrate.
Sprinkle with sugar.
