We’re having one of those days in Ohio that is snowy, cold and almost impossible to leave the house.
An arctic blast, blizzard conditions and sub zero temperatures make me want to bake! Oh yeah…I’m gonna stay inside, get out the yeast and knead something that has to rise.
These beehive buns are enhanced with the flavor of honey. They’re not sweet, their rich and dense with a wheat flavor and have a drizzle of honey glaze on the top. Because I like honey, I’ve included a honey butter recipe. Honey, honey, honey. Honey in the dough, honey in the drizzle, honey in the butter.
These beehive rolls raise twice and each one has to be rolled and twisted so allow plenty of time to make them.
2 cups whole wheat flour
2 packages active dry yeast
1-1/2 teaspoons salt
1 cup milk (I used almond milk)
1/3 cup honey
1/3 cup unsalted butter or margarine
1-1/2 – 2 cups all-purpose flour
In a large bowl combine first 3 ingredients of wheat flour, yeast and salt. Set aside.
In a small saucepan over medium low heat combine next 3 ingredients of milk, honey and margarine or butter. Stir until melted and smooth. Add this honey-butter mixture to the flour mixture.
Beat in eggs one at a time. Stir in 1-2 cups of all purpose flour until dough pulls away from sides of the bowl.
Knead the dough on a floured surface until smooth and elastic. Place in a greased glass bowl. Cover and rise in a warm place until doubled in size. Approx 1 hour.
Grease muffin cups. Punch down dough to remove air bubbles. Divide dough into 30 pieces. Roll one piece at a time to a 12 inch rope. If necessary roll with slightly greased hands. Coil each rope into a muffin cup. Tuck in the end of the rope into the top center of the coil.
Cover. Let rise again in a warm place until doubled, approx 45 minutes.
Preheat oven to 350 F. Uncover rolls and bake 12-15 minutes, or until golden brown. Remove from muffin cups to wire racks. While still warm, drizzle with honey glaze (recipe below). Enjoy these honey buns while they are still warm with honey butter (recipe below).
4 Tablespoons honey
3 Tablespoons unsalted margarine or butter
1 cup powdered sugar
1-1/2 teaspoons vanilla extract
dash of salt (optional)
In a small saucepan heat honey and margarine or butter until melted and combined. Remove from heat. Stir in powdered sugar and vanilla until mixture is smooth. Drizzle over warm rolls.
4 Tablespoons honey
3 Tablespoons butter at room temperature
Mix honey and butter until smooth.
I made a couple of little ones. These would be great for pastries at a shower, treats at a brunch or a special danish at a tea.
