I like this banana bread recipe. It’s an easy-to-follow recipe without too many ingredients. The banana bread is moist, dense, delicious and not too sweet.
Try this for your Fat Tuesday party, St. Patrick’s Day hangover or Easter brunch.
This is the kind of banana bread your grandma used to make. You’ll smell it baking in the kitchen.
Preheat oven to 350 degrees
Lightly grease a 9″ x 5″ loaf pan
2 cups flour
2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup of butter (room temperature)
3/4 cup brown sugar
2 cups mashed bananas
Combine the first three ingredients of flour, baking soda and salt. Set aside
Combine the butter and brown sugar. Mix until well blended. Add to the flour mixture above.
Add the eggs and mashed bananas to the flour mixture. Mix just until moist.
Spoon batter into the prepared loaf pan.
Bake at 350 degrees for 50-65 minutes.
Cool in the pan for 10 minutes before slicing.
A couple of notes:
I usually bake mine for 55 minutes. I do a knife test to be sure the batter is not raw.
It’s delicious if you eat it warm. I think it’s always better with butter.
My friend slices it thin and puts it in the toaster and butters it for breakfast or a treat with tea in the afternoon.
